ONION RINGZ

It is what it is and what it is is onion rings. Really crispy ones. Well easy. No stress. Nice.

1 Large Onion
175ml IPA Beer
2 Tablespoons Plain Flour (Plus a bowlful to coat)
Tablespoon Garlic Powder
Teaspoon Smoked Paprika
Teaspoon Salt
300ml Rapeseed Oil

Instructions

  1. Get yourself a bowl and add your plain flour, garlic powder, paprika and salt. Pour in your beer as you whisk until your batter is the consistency of thick-ish cream. This is your batter. What you don't need beer wise, you can drink. What a treat. If you don't drink you can use anything fizzy really. Ginger beer works.
  2. Peel your onion and then use a sharp knife to slice half inch bits, getting the full circular-ness of the onion. You should get about 10-15 rings once you push the inner layers out. Onions have layers. So do ogres. But this is an onion ring recipe. The nice thing is, the rings nearer the core of the onion will be extra small and crispy. Variation is important. Whack these all to one side and fill a bowl with flour as you're going to cover the onion rings in that before you dip them in the batter.
  3. Get a pan of rapeseed oil nice and hot. It should be bubbling gently. Medium heat is best here. Now is also a great time to coat a tray with tin foil. When your oil is ready and hot you can coat an onion ring in flour and then use a pair of tongs to cover it in batter before popping it in to your oil. I would do three at a time as it is important not to overcrowd the pan, this will reduce the oil temperature and screw up your onion rings. They need a couple of minutes before flipping them over and giving them another minute or so on the other side. After about 3.2 minutes they will be crispy and delicious. Pop them on your tin foil tray and repeat until you have the desired amount.
  4. You can pop these into a preheated oven for about 5 minutes on 165ºC to bring them all back to a nice temperature if you've taken AGES to do them all. Pop them in a bowl, dash them with a bit of salt and tuck in. They're such a good side. You can have them with steak or stick them in a burger or just dip them in a nice mayo/ketchup/hot sauce mix whilst watching some SPORTS.
